Shortbread Protein Cookies

This recipe is incredibly fast and simple! Zero prep andtakes only 5 minutes to prepare.

Pro tip: be sure to chill butter and have your water icecold. Have fun using different shaped cutters and even gofurther to decorate if desired! Perfect for snacking or protein cappuccino coffeedunking!

  1. 10oz brewed coffee
  2. 1 scoop Ascent Whey Cappuccino Protein
  3. Add marshmallows or whipped cream for fun!

Ingredients

2 cups – Unbleached organic all-purpose flour

½ cup – Stevia

2 scoops – Ascent Whey Vanilla Protein

8 ounces – Kerrygold Unsalted Grassfed Butter

¼ cup – Ice cold water

INSTRUCTIONS

Sift together flour, stevia and whey protein in a bowl.

Cut chilled block of butter into cubes and add to dry mixture.

Mix dry ingredients and butter together until it begins to resemble sand.

Add your ice cold water until it begins to form a ball and climb up the sides of your mixing bowl.

Roll out dough to ¼ inch thickness and use any cookie cutter shape of your liking.

Chill cut cookies for 1 hour before baking on a greased baking sheet or silpat.

Bake cookies for 10 minutes at 350 degrees.

Let cool and enjoy!
